New to WSM, Organic Squash fresh from Taproot Farms in Berks County, Pennsylvania. We are currently offering three peak season varieties: Bossa Nova (mottled skinned Bossa Nova squash has a smooth, succulent texture and mild, sweet flavor), Zephyr (Zephyr has an unusually delicious nutty flavor and firm texture), and Cousa (Cousa, or Lebanese type squash, has superb flavor comparable to two-toned Zephyr summer squash). Husband and wife, George Brittenburg and Ola Creston, owners of Taproot Farms in Berks County, Pennsylvania are strong believers in the power of organic natural farming practices.

Fresh to Walter Stewart’s, Organic Honeynut Squash from certified organic Hepworth Farms, a seventh generation family farm in the Hudson Valley. Honeynut squash is a butternut squash cross that fits in the palm of your hand and has about ten times the sweetness and squash flavor of the workaday butternut.
There are many ways to serve squash but here’s a great recipe from food.com that works with Honeynut Squash as well as Acorn, Butternet and many other varieties of winter squash. You may use other squash – you may even peel and cut the squash into bite size pieces, bake until soft, pour the honey mixture over and return to the oven for 5-10 minutes. Cut a thin slice off each half so the squash will sit nice and even.
