A few simple ingredients combine to create these delightful crisps from the crafters of fine cheese at Cabot. They’re rather addictive, so consider doubling the recipe for a crowd!

Ingredients

Nonstick cooking spray
16 ounces Cabot Sharp Cheddar, coarsely grated (about 4 cups)
3 tablespoons King Arthur Unbleached All-Purpose Flour
1 (9-inch) graham cracker crumb crust

Directions

Preheat oven to 375°F. Coat 2 large or 3 medium baking sheets with cooking spray. Toss together cheese and flour until well combined in a small bowl.
Place heaping tablespoonfuls of mixture 1 inch apart on prepared baking sheets, spreading out slightly (you can fit 12 mounds on large 12-by-15-inch sheet). Bake in middle of oven for 6 to 9 minutes, or until completely golden with no pale spots. Watch crisps carefully toward the end, removing fully-baked crisps with a metal spatula to wire rack and returning underbaked crisps to oven. Let cool completely. Store in airtight container for up to 3 days. Makes about 24 crisps.
