When we think of all the delicious soups we could be making while the weather just hasn’t turned warm, this is one that is simple but rich tasting. Stonewall Kitchen shares this creamy tomato soup with a couple of garnishes with a twist! This recipe is great to double depending on how many you are serving. This serves four. Consider grabbing some great homemade bread from the back of the store to serve with this hearty soup.
Creamy Tomato Soup Garnished with Wasabi Peas
Ingredients
2 (28-ounce) cans whole plum tomatoes, pureed
6 basil leaves, julienned
3/4 cup heavy cream
1 Tablespoon Stonewall Kitchen Roasted Garlic Oil
1/2 teaspoon ground peppercorns
Salt and pepper to taste
Wasabi peas, for garnish
Stonewall Kitchen Spicy Corn Relish, to garnish
Directions
In a saucepan, combine plum tomatoes, basil, Roasted Garlic Oil, salt and pepper to taste. Heat until warm. Add cream and heat to serve. Ladle about 2 Tablespoons of Spicy Corn Relish in each bowl, fill with soup and sprinkle on wasabi peas to garnish.
